kcal6 hard boiled eggs, chopped
1/4 cup Celery, finely chopped
1/2 small bag of frozen peas & carrots, steamed
1/2 cup Green onions or Chives, chopped
1/2 cup fat free Greek yogurt
1 tablespoon Dijon mustard
Salt and pepper to taste
In a bowl, place yogurt and dijon mustard (or more if you like) and salt and pepper to taste. Whisk until well mixed.
Combine rest of ingredients and mix well.
Serve with toasted whole wheat toast, and enjoy!
