Ingredients

  • 6 hard boiled eggs, chopped

  • 1/4 cup Celery, finely chopped

  • 1/2 small bag of frozen peas & carrots, steamed

  • 1/2 cup Green onions or Chives, chopped

  • 1/2 cup fat free Greek yogurt

  • 1 tablespoon Dijon mustard

  • Salt and pepper to taste

Directions

  • In a bowl, place yogurt and dijon mustard (or more if you like) and salt and pepper to taste. Whisk until well mixed.

  • Combine rest of ingredients and mix well.

  • Serve with toasted whole wheat toast, and enjoy!
