Skipping the turkey this year? No problem! Thanksgiving chicken uses all the spices and vegetables you love for a quicker, easier thanksgiving meal without having to sacrifice any of the flavor.

Ingredients

  • 4 chicken breast 

  • 4 tablespoons butter  

  • 1/4 teaspoon garlic powder 

  • 1/4 teaspoons onion powder 

  • 1/4 teaspoon paprika 

  • 1/4 teaspoon dried oregano 

  • Salt and pepper to taste 

  • 1 cup vegetable broth 

  • 1 onion, coarsely chopped (1-inch pieces) 

  • 1 carrot  

  • 1 stalk celery  

Directions

  • Place the 2 tablespoons of butter, garlic powder, onion powder, paprika, oregano, salt and pepper in a bowl. Stir until combined and season the chicken.  

  • In a large pan, melt remaining butter and cook chicken, 7 minutes each side or until cooked through.  

  • For the vegetables: in a pot, pour veggie broth and add onion, carrot, and celery. Season with salt and pepper.  

  • Once vegetables are fork-tender, discard broth and plate the vegetables with the chicken.
