If you say you don’t like Brussel sprouts, think again! Not only are these a great source of iron but roasting them in the oven makes for the perfect flavor and a flakey, crispy texture.

Ingredients

  • 1 package fresh Brussel sprouts (not frozen) 

  • 3 tbsp. olive or grape seed oil

  • 1 tsp. garlic powder

  • 1/2 tsp. salt

  • 1/2 tsp. pepper

Directions

  • Preheat the oven to 375°F.

  • Slice the Brussel Sprouts in half (length-wise).

  • Spread the oil on a 9x13” cookie sheet/aluminum baking pan. 

  • Mix the brussels in the oil and sprinkle with the seasonings. 

  • Roast for approximately 20 minutes, stirring once to ensure the brussels cook evenly.
