If you’re looking to start your morning with a breakfast that will sustain you—this is it! These Pumpkin Pie Overnight Oats are an easy way to get in fiber and vitamins.

Ingredients

  • 1/4 cup unsweetened Greek yogurt (or vanilla yogurt)

  • 1/2 cup unsweetened vanilla almond milk (or any nut milk)

  • 1/4 cup pumpkin puree

  • 1-2 tbsp. pure maple syrup

  • 1/2 tsp. vanilla extract

  • 1/2 cup whole rolled oats – dry (not steel cut oats)

  • 2 tsp. chia seeds

  • 1/2 tsp. pumpkin pie spice or your favorite combination of cinnamon, ginger, nutmeg, and cloves

Directions

  • Mix all the wet ingredients in a medium sized bowl – yogurt, almond milk, pumpkin puree, vanilla and maple syrup until well combined. 

  • Add the dry ingredients to the mixture and stir in the oats, chia seeds and spices.

  • Once all ingredients are combined, serve in mason jars and refrigerate overnight. You can make several at a time as the overnight oats keep for up to a week. Enjoy!
