1 1/2 cups lukewarm water
1 1/2 teaspoons active dry yeast
3 teaspoons salt
5 cups "OO" flour

Dissolve active dry yeast and salt in warm water in a small bowl. Let stand until yeast softens and begins to form a creamy foam, about 5 to 8 minutes.
Add yeast mixture to flour and mix with your hands. Once combined enough to form a ball place on a floured counter and knead for 5-10 min.
Roll into ball and place in bowl covered with a damp cloth for 2-3 hours to rise.
Once the dough has doubled in size, knead again a few times.
Split and roll into two pizza dough balls. Then cover with a lightly damp cloth for 30 min.
Place your dough on a floured surface again, spread the dough out to a 12-15 inches circle. You can pick up the dough to stretch or roll out.
Top crust as desired and bake at 500 degrees F until golden, 8 to 10 minutes.
