Ingredients
4 chicken breast
4 tablespoons butter
1/4 teaspoon garlic powder
1/4 teaspoons onion powder
1/4 teaspoon paprika
1/4 teaspoon dried oregano
Salt and pepper to taste
1 cup vegetable broth
1 onion, coarsely chopped (1-inch pieces)
1 carrot
1 stalk celery
Directions
Place the 2 tablespoons of butter, garlic powder, onion powder, paprika, oregano, salt and pepper in a bowl. Stir until combined and season the chicken.
In a large pan, melt remaining butter and cook chicken, 7 minutes each side or until cooked through.
For the vegetables: in a pot, pour veggie broth and add onion, carrot, and celery. Season with salt and pepper.
Once vegetables are fork-tender, discard broth and plate the vegetables with the chicken.
