Sweet potatoes don’t just have to be a thanksgiving dish and this blondie recipe will show you how! This treat makes great use of this sweet root and can be enjoyed all year round. In under half an hour you’ll have a nutritious dessert that’s sure to satisfy. 

Ingredients

  • 1 cup mashed sweet potato

  • 1/2 melted butter

  • 1/3 cup maple syrup

  • 2 eggs

  • 2 tsp vanilla extract

  • 1/3 cup white chocolate chips

  • 1 ¼ plain whole wheat flour

  • ¼ tsp baking powder

Directions

  • Bake sweet potato at 400F for 45 to 60 mins and set aside to cool.

  • Turn oven down to 345F and grease a 9x13 in pan.

  • In a large bowl, whisk together sweet potato, melted butter, maple syrup, vanilla, and eggs.

  • Add in white chocolate chips and then fold in flour and baking powder.

  • Spread mixture into a pan and bake at 345F for about 15 minutes.

  • Let cool, cut, and enjoy!
