This Indian Masala Chai concoction of Assam black tea and spices will warm you right up. A splash of pumpkin will make you want to carve a spooky pumpkin.

Ingredients

  • 8 black tea bags 

  • 4 cups water

  • 4 cups milk

  • 2 tbsp fresh ginger 

  • 8 tsp Sugar 

  • 8 cardamom

  • 12 peppercorn 

  • Pumpkin puree (not pumpkin pie filling)

  • Maple syrup or honey

Directions

  • Crush cardamom, cinnamon, peppercorns, and cloves. Crush fresh ginger separately (mortar and pestle recommended)

  • Add water to a pot set to medium high. 

  • In a separate pot, reduce pumpkin puree with honey or maple syrup.

  • When the water simmers, add tea bags and crushed spices.

  • Once water reaches a boil, add desired milk. 

  • Stir and let simmer with the lid open, once pot has reached a rolling boil, turn off heat and add sugar and pumpkin.

  • Filter and serve!
