Serve this Lemon Dill Salmon as a main protein that adds omega-3s to any meal. This dish has a sharp, citrusy punch that will pair well with roasted veggies or a grain of your choosing.

Ingredients

  • Fresh Salmon Portions of approximately 4 oz each

  • Fresh Lemon juice from 1 large lemon

  • Fresh or dried dill weed to taste

  • 1 tbsp. Olive Oil

  • Salt and pepper to taste

Directions

  • Start by making a marinade of the olive oil, lemon juice, and seasonings.

  • Spread marinade over the salmon filets and put on a parchment-paper lined baking sheet.

  • Roast in a 400°F pre-heated oven for approximately 15 minutes or until only slightly pink in the middle.
