Green Bean Casserole

Green bean casserole is a staple and is great at potlucks! This dish makes everything from scratch—including the crispy onion topping! If you’d like, you can even add your own gravy recipe for some extra “oomph”.

Green bean casserole is a staple and is great at potlucks! This dish makes everything from scratch—including the crispy onion topping! If you’d like, you can even add your own gravy recipe for some extra “oomph”.

Ingredients

  • For the onion topping: 

  • 2 medium yellow onions, thinly sliced 

  • 1 tablespoon oil 

  • 1/2 cup all-purpose flour  

  • 1/2 cup panko breadcrumbs 

  • 1/2 teaspoon garlic powder 

  • 1/2 teaspoon salt 

  • For Casserole:  

  • 2 pounds fresh green beans 

  • 2 tablespoons butter 

  • 1 pound sliced mushrooms 

  • 1 teaspoon fresh oregano 

  • 2 tablespoons butter 

  • 3 cloves minced garlic 

  • 1/2 cup grated Romano or Asiago cheese 

Directions

  • Preheat oven to 425 degrees F.  

  • In a large bowl and mix onions, oil and dry ingredients. Once coated, put onions onto prepared baking sheet and bake for 15-25 minutes until crispy.  

  • Once the crispy onions are done, take out of oven and reduce the heat to 350 degrees F. 

  • While the onions are cooking, bring a large pot of salted water to a boil. Add green beans and cook for about 3 minutes. They should still be slightly crunchy.  Set aside.  

  • Add 2 tablespoons butter to a pan over medium heat. Add in the mushrooms, oregano, salt and pepper. Cook mushrooms, stirring occasionally until mushrooms are cooked down, golden brown. 

  • Grease a 9x13 inch baking pan and toss in green beans, mushrooms, minced garlic, desired cheese and 1/4 of the crispy onions.  

  • Cover the casserole with foil and bake for 25-30 minutes. After that time remove the foil and sprinkle the remaining crispy onions on top (and more cheese of desired). Bake for 10 more minutes.
