Ingredients

  • 1 ½ cups cooked, shredded chicken breast

  • 1/4 cup plain Greek yogurt

  • 2 tablespoons mayonnaise (optional, for creaminess)

  • 1 teaspoon Dijon mustard

  • 1 celery stalk, finely chopped

  • 2 tablespoons red onion, finely chopped

  • 1 tablespoon fresh parsley, chopped

  • Salt and pepper to taste

  • 6 large lettuce leaves (e.g., Romaine, Bibb, or Butter lettuce)

  • Optional: 1/4 avocado, sliced, or 1 tablespoon slivered almonds for garnish

Directions

  • Prepare the Chicken Salad:

      • In a medium bowl, mix Greek yogurt, mayonnaise (if using), and Dijon mustard until smooth.
      • Add shredded chicken, celery, red onion, parsley, salt, and pepper to the bowl. Mix well to coat all the ingredients evenly.
  • Assemble the Wraps:

      • Wash and pat dry the lettuce leaves.
      • Spoon a portion of the chicken salad into the center of each leaf.
      • Add avocado slices or almonds for an extra garnish, if desired.
  • Serve:
