Ingredients

  • 3 cups chicken or vegetable stock

  • 1 1/2 cups water

  • 2 celery stocks, diced

  • 2 carrots, diced ¬†

  • 1/2 yellow onion, diced

  • 2 Artichoke hearts, quartered

  • 2 cups spinach

  • 2 tbsp. lemon juice

  • 1/4 tsp. basil

  • 1/4 tsp. thyme

  • 1/4 tsp. rosemary

  • 1/4 tsp. oregano

  • 1 pat butter

  • Salt

  • Pepper

Directions

  • Wash celery and peel carrots. Chop up celery, carrots and onion.

  • In a large pot, add 1 pat of butter to the bottom and stir in celery, carrot and onion.

  • Once the vegetables are cooked, add in vegetable broth and water, then bring to a low boil.

  • Add in quartered artichoke hearts and spinach along with the lemon juice. Adjust dry seasonings to taste. Cook until slightly thickened.

  • Serve and enjoy!
